This is a very easy, very tasty fajita recipe. It takes about 15 minutes depending on how you do it.
Ingredients:
~ One can of chicken
~ One can of black beans
~ Roasted or regular red pepper (roasted has more flavor)
~ Corn
~ Hot sauce
~ Cumin
~ Chili powder
~ Garlic powder
~ Cilantro
~ Cheese - optional
~ Extra thin corn tortillas
You need about 1 pepper & 1/2 can bb for 1 can chicken. It makes around two servings depending on your level of hunger.
Directions:
~ Begin heating black beans on stove top, medium heat.
~ Open can of chicken, drain and dump into a medium heat skillet with a tablespoon-ish of olive oil.
~ Put a cup or so of corn in a microwave safe dish, cover it and microwave it for about 2 minutes.
~ Cut up peppers to desired size (thinner/smaller will cook faster) and dump in with chicken. Remember that roasted peppers do not need to cook, you just need to heat them.
~ Add seasonings to skillet, however much you like.
~ Turn down heat.
~ Drain corn (if necessary) and dump in with chicken and peppers.
~ Drain beans, rinse with hot water, shake excess water and dump them into the skillet.
~ Add your hot sauce, or salsa if you'd like, to your taste.
~ Put a couple tortillas on a plate and microwave for 15 seconds, or until warm.
~ Scoop your mixture onto your tortillas, sprinkle with cheese and devour.
Option: You don't have to cook the chicken. However, I think it gives it a better texture than microwaving it, and since you're already using the stove top you might as well do the chicken at the same time, and the peppers if they're not roasted too.

As you can see, I once again posted photos of the after... I get so excited about eating while I'm making the food that I just forget that I want to blog about it. Durrrr. But, I will say, that although I use canned chicken (I'm poor and lazy!) this is a tasty and healthy meal and perfect if you don't feel like putting much effort into cooking. Which, for me, is all the time. :)
