Quiche Muffins

Occasionally I like to make quiches. This is the only form of egg I will eat. Mostly because I can't taste the egg. Blech.


I like to play with ingredients in my quiches, however, two absolute staples are spinach and cheese.

I also like to add bell peppers, zucchini, potatoes, green beans. I make mostly vegetarian quiches, lots of protein in the eggs already, but I've seen many recipes that call for sausage, bacon; I'm sure you could also use pepperoni, chicken, whatever.

So, I got a craving for quiche. I don't know where it came from but it was there and I couldn't stop it. I thought I would just make a small batch of quiche muffins, because I got a new muffin tin and had only three eggs. Well that's not what happened. I filled the whole dang muffin tin.

I did have to run to the store halfway through and pick up more eggs. Good thing the store is 5 minutes away. But, anywho, these little quiches turned out very nicely. Here's the recipe:

And, here are some photos of the process:

Cook yo chickpeas.
Chop yo green beans and spinach.
Grease and bread crumb yo shiny new muffin tin that smelled wonderful.
Mix yo eggs, milk and spices.
Mash yo chickpeas.
Fill yo muffin tin with yo stuff.
Watch yo quiche muffins cookin, admire the parmesan crisping on top.
Beam at yo done quiche muffins.
Eat yo quiche muffin.

I thought the chickpeas added a great flavor (to mask the egg, duh!), but what other things do you like in your quiches?
